Ah Friday, how we long for you every Monday.
By this point the fridge is starting to look a bit bare, the desire to spend another day at work is faltering and thoughts of weekend fun are starting to fog your brain.
This is the perfect time to clean out the shambles and leftovers in your veggie drawer, fresh for a weekend shop. Grate the floppy old carrot, slice up the bruising zucchini, de-cob that corn that's been sitting there for a week and cut out the soggy bits of tomato.
Chuck the veggies into a saucepan, crack in a few eggs and scramble it all together perhaps with any fresh herbs you've got lying around. Add in some chilli, or any cheese you'd like, or if you're daring, some bacon.
Serve it up with some toast and avocado and you're done. Now you have a full belly to rush off to work to then concentrate on the hours left until friday arvo drinks...
