Do not disturb

This is one of the easiest and most satisfying lunches you can make and eat.
(Apart from a huuuuge plate of spaghetti bolognese because let's be honest, nothing beats that.) 

Brocollini Potato Salad 
Serves uno 

1/2 a bunch of brocollini 
2 to 3 kipfler potatoes
A large handful of chunky shaved parmesan
A large handful of broad beans (or peas)
1 shallot
Lemon zest
Olive oil

Wash and scrub the potatoes, but leave the skins on. Place on a baking tray and roast in a moderate oven until soft. Set aside to cool.

Thinly slice the shallot and sauté in a pan with some olive oil until translucent and golden. Roughly chop up the broccolini and chuck into the pan along with the broad beans and some lemon zest. Cut up the potatoes into bite size chunks and stir through the broccolini. Serve salad warm with a squeeze of lemon juice and parmesan cheese.
