A Big Salad

George: Did you see what just happened?

Jerry: Well, that all depends. . .

George: Did you happen to notice that Julie handed the big salad to Elaine?

Jerry: Yeah, so?

George: Well, she didn't BUY the big salad. I bought the big salad.

Jerry: Is that a fact?

George: Yes it is. She just took credit for my salad. That's not right.

Jerry: No it isn't.

George: I mean I'm the one who bought it.

Jerry: Yes you did.

George: You think she should have said something?

Jerry: She could have.

George: Oh, I know.

Jerry: Imagine, her taking credit for your big salad.

George: You know, you buy a big salad for somebody it would be nice if they knew it.

Beetroot and Feta salad with Caramelised Walnuts
Serves 6 as a side

1 big bunch of fresh beetroot with stalks
300g block of smooth Danish feta, cut into bite sized chunks
1/2 a spanish (red) onion
Lemon juice
Few sprigs of oregano
1 tablespoon olive oil
Salt and Pepper
1 1/2 tablespoon dense brown sugar
1 1/2 tablespoon butter
300g walnuts
Big bunch of rocket

Boil the beetroot bulbs in a big pot of boiling water until soft and tender. Cooking time depends on the size of the beetroot but it should take about 30 minutes. Once cooked, drained the beetroot, set aside to cool for about 10 minutes and while still warm peel the skin off the beetroot (wear gloves!). Cut into big chunks, arrange on a roasting tray, cover with the olive oil, salt, pepper and oregano. Roast in a 180 degree celsius oven for about 20 minutes.

For the last 5 minutes of roasting, add the walnuts in on a separate tray to bake until golden and crunchy. Keep watch on the nuts because they burn easily!

Meanwhile, on a pan over a medium heat add the butter and the brown sugar. Stir until a thickish sauce develops and pour in the roasted walnuts. Stir to combine and leave to cool.
Thinly slice the red onion and steep in a dish with a light covering of lemon juice and salt. This takes the acidic bite out of the onion, making it lovely and sweet which is a nice way to eat it in a salad.

Place the washed rocket in a serving dish. Lay on the cubed feta, the beetroot chunks, the red onion, and finally pour over the walnuts with the sticky-ish sauce. Just before serving pour over a simple dressing of olive oil, lemon juice, salt and pepper.
