This dish needs no introduction. Simple food, simple flavours, delicious meal.

Spaghetti Gamberi
(Serves 2-4)

400g fresh green prawns, shelled, deveined with tails intact
300g spaghetti
4 cloves of garlic, thinly sliced
1/2 teaspoon chilli flakes
Handful of roughly chopped parsley leaves
1/4 cup extra virgin olive oil
1/2 cup white wine
1 really fresh, ripe tomato, diced
Salt and pepper

Have the spaghetti boiling in a large pot of water. When it is a few minutes away from being ready, quikcly saute garlic, tomatoes, chilli flakes, and prawns in the olive oil for about 3 minutes. Add in the wine and parsley and season with salt and pepper. When pasta is cooked, using tongs pick up handfuls of the spaghetti and put into the saucepan with the prawns. The little bits of pasta water that come with spaghetti will help to create a nice sauce for the dish. Sprinkle with extra parsley and a few shavings of parmesan and enjoy!

  1. Prawns and pasta are my favourite at the moment (with heaps of garlic - whiffy but delicious!)
