Meatless Mondays

Mondays are usually a bit bland. It's the first day of the working week and the weekend come down has well and truly begun. And, let's be honest, it's usually the day where you tell yourself "I'm going to be healthy from today onwards".

So it's time to slap a mushroom on the barbie and make a quick and easy meal - with no meat. Just a simply prepared delicious veggie meal that will fill your tum, make you feel strong and more importantly be helping out good ol' Mother Nature.


Soba Noodles with Kale, Mushrooms and Tahini Sauce 
Serves 1

1 packet of soba noodles
1 cup of roughly chopped kale
4 mushrooms - I used swiss brown, sliced thickly
1 clove of garlic, grated
Large knob of ginger, grated
1 tablespoon tahini
1 tablespoon unsalted unsweetened peanut butter
1 tablespoon kecap manis
2 tablespoons warm water
Few drops of sesame oil
Big handful of roughly chopped coriander
Juice from 1 lime

Cook the soba noodles according to packet instructions (they take about 5 minutes in boiling water). Meanwhile in a saucepan add the garlic, ginger, a bit of olive oil and a few drops of sesame oil. Add the mushrooms and kale and fry off on a medium heat for about 5 minutes.
To make the sauce combine tahini, peanut butter, kecap manis, water and half the lime juice.

Drain the soba noodles and add to the pan with the mushrooms and kale. Turn the heat off and pour the sauce over the noodles and vege. Finish with another grating of fresh ginger, a handful of coriander leaves and some more fresh lime juice.
